

To prepare this rich and nutritious Makhana Payasam, take two cups of makhana (fox nuts), one litre of milk, one cup of grated jaggery, two tablespoons of ghee, and a mix of dry fruits including cashews, almonds, pistachios, and raisins. Begin by heating ghee in a pan and roasting the makhana on medium flame for about 10 minutes until they turn crisp. Allow them to cool, then grind half of the roasted makhana into a coarse powder.
In a separate vessel, boil the milk and let it simmer for 10 minutes. Add both the roasted whole makhana and powdered makhana into the milk and cook for another 10 minutes until they soften. Mix in jaggery (or sugar), cardamom powder, and saffron, and cook for a couple of minutes. Finally, fry the dry fruits in ghee and add them to the payasam along with dry coconut powder. Serve hot for a wholesome and flavorful dessert.
